FOOD SAFETY EDUCATION PROJECT

FOOD HYGIENE PRACTICE IN PREPARATION AND HANDLING COMPLEMENTARY FEEDING AMONG MOTHER HAS 6-24 MONTHS CHILDREN THROUGH COUNSELLING OF CADRES

BACKGROUND

Complementary feeding is defined as the process starting when breast milk alone is no longer sufficient to meet the nutritional requirements of infants, and therefore other foods and liquids are needed, along with breast milk. The target age range for complementary feeding is generally taken to be 6 to 24 months of age, even though breastfeeding may continue beyond two years1.

Complementary feeding should be prepared and given in a safe manner, meaning that measures are taken to minimize the risk of contamination with pathogens.

Attention to hygienic practices during food preparation and feeding of complementary food is critical for prevention of gastrointestinal illness. Practice good hygiene and proper food handling by a) washing caregivers’ and children’s hands before food preparation and eating, b) storing foods safely and serving foods immediately after preparation, c) using clean utensils to prepare and serve food, d) using clean cups and bowls when feeding children, and e) avoiding the use of feeding bottles, which are difficult to keep clean.

The peak incidence of diarrhea disease is during the second half year of infancy, as the intake of complementary foods increases (Martinez et al., 1992). Microbial contamination of foods is a major cause of childhood diarrhea, and can be prevented by the practices described above, because they are difficult to keep clean.

Young children are more likely to get diarrhea than older children and adults because their immune systems are still developing and the protection afforded by the gut flora is not as effective as in adults. In addition, children consume more food in proportion to their weight than adults, hence they have greater exposure to foodborne toxins and contaminants2.

Prevalence of diarrhea in Indonesia based on RISKEDAS 2007 is 9.0%, episodes diarrhea occur annually in children under the age 5 years (33.2%). Properly hand washing behavior only 23.2% and 38.7% household have clean and healthy lifestyle3.

Trained health worker volunteer (cadres) about hygiene practice in the food preparation complementary feeding is one of strategy to educated cadres and after that they would be dissemination their knowledge and skill to the mother in the Health Post (POSYANDU) or in their community.

OBJECTIVE

By the end of one year project, food hygiene practice in the food preparation complementary feeding among mother has 6-24 months children through counselling of cadres will increase from baseline in Takalar district

TIME, PLACE AND NUMBER OF PARTICIPANTS

· Training is conducted for 3 days, number of participant is between 12-20 participants in each PHC or at least one cadres each Health Post

· Follow up of training conducted by cadres in their health post and in the household as long as 10 months and number of household target minimally 400 household (20 cadres x 2 HH x 10 months) each health post/PHC during this project, so total target is 1600 household (400 HH x 4 PHC). Step of counseling in household is following :

a. Cadres make a list of mothers which have children 6-24 month in their area, using form 1.

b. Cadres contact the mother, explain the objective of the project and asking them to participate in this project.

c. Cadres assess food hygiene practice of mother in the preparation complementary feeding, using form 2

d. Cadres conducting counseling, time frame each household is 2 weeks.

e. Cadres assess food hygiene practice of mother in the preparation complementary feeding after 2 weeks, using form 3.

· Cadres send a form 2 and 3 to supervisor every month

· Participants of training is cadres and participants of follow up is household

· Facilitators and supervisors consists of NGO staff and PHC staff (Nutritionist and sanitation
